Chicken thighs, skinless and boneless, cut into bite size 1/2 Tsp Cumin seeds 1/2 Tsp Fennel sedds 1/4 Tsp Thyme, dry 1/2 Tsp Paprika Pinch red pepper flakes ( optional ) 1 Yellow onion, ,peeled and sliced medium size 3 Yukon gold, peeled and cut into small bite size cubes 1 Tbs Garlic, chopped 1/4 C Cilantro, chopped for cooking and garnishing
