INGREDIENTS 3lb. chicken drumsticks, 6 Medium Red potatoes, cleaned and cut into quarters 1 Large sweet onion, cut into wedges ( 8 - 10 ) 2 Lemons, cleaned and cut into thin slices 1/4 c olive oil 1 garlic head, peel cloves and leave whole 4 -6 Fresh thyme sprigs 2 Fresh rosemary sprigs 1/2 Tsp red pepper flakes 1 tbs cumin coriander powder 1 tsp paprika 1 cup water or chicken stock Salt and pepper to taste Parsley , chopped for finishing and garnish
